WINEMAKING<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

After arriving at the winery, the grapes are destemmed and gently crushed <\/strong>without breaking the berries.Fermentation takes place exclusively with indigenous yeasts <\/strong>in masonry tanks filled to no more than 50% of their capacity, where the must macerates for 15 days.<\/strong>After a very gentle pressing at no more than 1 bar<\/strong> using a central membrane pneumatic press, the wine rests for a short period in masonry tanks before ageing for nine months in barriques and tonneaux<\/strong>. It is then blended in stainless steel before bottling. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t

At first approach, Jubilus reveals an enveloping and complex bouquet. Ripe red fruit aromas emerge, particularly cherry and plum, accompanied by delicate floral notes of violet that lend a subtle sweetness, together with gentle earthy nuances.As the wine opens in the glass, hints of spice, vanilla and tobacco gradually unfold.On the palate it is full-bodied and harmonious, with supple tannins and a refreshing acidity. The finish is long and persistent, with lingering fruit notes. Jubilus is an elegant expression of Sangiovese and the Tuscan winemaking tradition. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
