Aetheris is an artisanal rosé wine made from Sangiovese grapes. It marks the beginning of the Pian del Pino project towards lighter wines, created for immediate enjoyment without sacrificing elegance and depth.

VINEYARD
Vigna delle Farfalle, eastern rows.
Spur cordon/Guyot training system, vine spacing 2.20 × 0.80 m, north–south exposure. Medium-textured, silica-rich soils with good drainage.
HARVEST
Hand-harvested in early September into small 12 kg perforated crates.
WINEMAKING
Once the grapes arrive at the winery, they are destemmed and gently crushed, followed by a delicate pressing. Fermentation takes place spontaneously in barriques with regular bâtonnage.
After fermentation, the wine rests in stainless steel until bottling in spring.
Part of the wine is used to produce Lympha, our bottle-fermented rosé, while the remaining portion becomes Aetheris.
No fining. No filtration.
TASTING NOTES
Aetheris — “air, ether” — is a Sangiovese that becomes light.
The colour is pale onion skin, bright and vibrant.
The nose is refined and complex, with white flowers, dog rose, citrus, pomegranate, wild herbs and wet stone.
On the palate it is taut yet harmonious, with a delicate natural effervescence that enhances freshness and gives the wine an energetic, continuous flow.
The character of Sangiovese remains clearly recognisable through its elegance, depth and mineral vein, which carries the finish with persistence.
FOOD PAIRING
Ideal with raw and cooked seafood, fresh cheeses, delicate white meats and vegetable-based dishes.
It also pairs beautifully with light Mediterranean cuisine and Asian dishes that rely on balance and spice.
AGEING POTENTIAL
Ready to enjoy now, with an ageing potential of 2–3 years if properly cellared.
